Trail Mix Oatmeal



I needed to have some baked oatmeal.  Instead of going the traditional route, I started throwing some fall-themed trail mix together and it's safe to say that this will be some sort of regular breakfast in our house.  It's sort of like having a huge cookie, crumpled in the form of oatmeal.  As long as it's under the oatmeal disguise, you can use the excuse that it's good for your heart and eat as much as you like.

Trail Mix Oatmeal


3 cups old fashioned oats
1/2 c. packed brown sugar
1/4 c. toasted wheat germ
1/2 c. dried cranberries (raisins would be good too)
1/3 c. butterscotch chips
1/2 c. chopped pecans
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 eggs
1/3 c. canned pumpkin
4 tbsp. butter, melted
1 c. milk

Preheat oven to 375 degrees.

In large bowl, stir together oats, sugar, wheat germ, cranberries, butterscotch chips, pecans, salt, baking soda, and cinnamon.  Set aside.



Melt butter.  In separate bowl, beat eggs.  Add milk, pumpkin, and butter.  Whisk until well combined.  Add to dry mixture.



Spread into lightly greased 9 x 13" pan, and bake for 25 minutes.  The top should be golden brown.



Filling, and so full of fall flavor.

Yum! I bet the butterscoth chips are the perfect touch.
