25 Days of Christmas Cookies: Honey Maple Cookies



These cookies are a different take on your traditional chocolate chip cookies.  There is no sugar, but instead there is honey and maple syrup.  And yet, neither flavor comes through in the end.

The only thing that the honey and syrup translates to is: extra chewy.  You know how I feel about extra chewy cookies.

These would be great to try with other chips and other optional ingredients.


Honey Maple Cookies


1 cup shortening
3/4 cup honey
3/4 cup syrup
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped pecans

Beat the shortening until light and fluffy.  Add honey and syrup a little bit at a time beating well after each addition.  Add eggs one at a time-don't panic when your mixture looks like rotten, curdled milk.  Beat in vanilla.  Combine dry ingredients and gradually add to the honey mixture-mix until just moistened.  Stir in the chips and pecans.

Drop by rounded tablespoonfuls onto greased baking sheets.  Bake at 350 degrees for 8-10 minutes or until golden brown.  Remove to wire racks and let cool.
